Tasting notes
A deeply and intensely coloured wine.
In the mouth, highly concentrated with well-marked but velvety tannins.
Attractive aromatic expression of spices (pepper) and well-ripened cherry.

Granitic soil with high levels of manganese
Exposure: south-east
Altitude: 230 m
Slop: 5%

Grape variety: Gamay
Planting density: 11,000 plants per hectare
Average yield: 25 hl/ha
Picking by hand
Vinification
Triage on sorting table.
Vatting of whole crop.
Alcoholic fermentation under CO2 en wooden vats.
Pumping-over twice daily. Vatting lasts 15 days.
Pressing followed by transfer to oak barrels (1 in 5 new barrels).
Malolactic fermentation in barrel. 10 months' elevage in barrels, then 4 months in stainless steel vats.
Racking, then light filtration before bottling.
No fining.
